Building a wood burning oven "Finishing up"

The last step in the process of building the oven was to enclose the last 3 sides of the oven with a weatherproof cover. We chose corrugated sheet metal for longevity, speed and cost. Here is what the finished product looks like.


This brings the building phase of our oven project to a close. We will continue to update everyone with data on how the oven behaves over time but the main focus will now turn to actually using this thing and the recipes that we develop. So far we have tried pizza (duh), bread,  beer can chicken, pulled pork and chocolate chip-hazelnut cookies. One of the things I was going to do is take a close look at oven management i.e.. how long to heat up vs how long to cool off to a given temp with the door on and off. One thing I have learned is that it takes a while for the floor temp to drop down to a usable temperature after the fire is removed leading to bread that is burned on the bottom before a good crust develops on the top. So more data is on the way as I get more time to look into the practical aspects of using one of these things.
